Types of Kunafa

There are several variations of Kunafa, each differing in texture and ingredients:

1️⃣ Kunafa Nabulsiya (Nabulsi Kunafa)

  • Originates from Nablus, Palestine.
  • Made with thin shredded phyllo dough (kataifi) and Nabulsi cheese.
  • Baked until crispy and soaked in sugar syrup.

2️⃣ Kunafa Khishnah (Crunchy Kunafa)

  • Features a coarse shredded dough for extra crispiness.
  • Usually layered with cheese or clotted cream (ashta).

3️⃣ Kunafa Na’ama (Soft Kunafa)

  • Uses finely ground semolina dough instead of shredded phyllo.
  • Has a softer, cake-like texture.

4️⃣ Kunafa with Nuts & Cream

  • Filled with pistachios, walnuts, or almonds, along with cream or custard.

Ingredients Used in Kunafa

Although there are many variations, traditional Kunafa consists of:

  • Phyllo Dough (Kataifi): Thin, shredded pastry for the crunchy texture.
  • Cheese or Cream (Ashta): Mozzarella, Akkawi, or Nabulsi cheese are commonly used.
  • Sugar Syrup: Made with sugar, water, lemon juice, and rose water.
  • Butter or Ghee: For a rich, buttery flavor.
  • Crushed Nuts (Optional): Pistachios or almonds for garnish.

How to Make Kunafa (Traditional Recipe)

Ingredients:

✔️ 250g Kunafa dough (shredded phyllo)
✔️ ½ cup melted butter or ghee
✔️ 200g sweet cheese (Mozzarella, Akkawi, or Nabulsi)
✔️ ½ cup sugar
✔️ ½ cup water
✔️ 1 tsp lemon juice
✔️ 1 tbsp rose water
✔️ Crushed pistachios for garnish

Steps to Prepare:

1️⃣ Prepare the Syrup: Boil sugar and water until thick, then add lemon juice and rose water. Let it cool.
2️⃣ Prepare the Dough: Mix the Kunafa dough with melted butter and spread half of it in a baking tray.
3️⃣ Add the Filling: Layer the cheese or cream evenly over the dough.
4️⃣ Cover & Bake: Spread the remaining Kunafa dough on top and bake at 180°C (350°F) for 25-30 minutes until golden brown.
5️⃣ Soak in Syrup: Once out of the oven, pour the cooled sugar syrup over the hot Kunafa.
6️⃣ Garnish & Serve: Top with crushed pistachios and serve warm.
