How to Make Traditional Sambar

Ingredients:

✔️ 1 cup toor dal
✔️ 2 cups chopped vegetables (drumstick, carrot, brinjal, etc.)
✔️ 1 lemon-sized tamarind ball
✔️ 2 tbsp sambar powder
✔️ ½ tsp turmeric powder
✔️ 1 tsp mustard seeds
✔️ 2 dry red chilies
✔️ 1 sprig curry leaves
✔️ 1 pinch asafoetida (hing)
✔️ 1 tbsp ghee or oil
✔️ 4 cups water
✔️ Salt to taste

Steps to Prepare:

1️⃣ Pressure cook toor dal with turmeric until soft. Mash it well.
2️⃣ Soak tamarind in warm water, extract the pulp, and set aside.
3️⃣ Boil vegetables in a pot with salt and tamarind pulp until tender.
4️⃣ Add sambar powder and let it simmer.
5️⃣ Mix in the mashed dal, adjust water and salt, and let it cook for 5 minutes.
6️⃣ Prepare tempering: Heat ghee, add mustard seeds, curry leaves, dry red chilies, and hing.
7️⃣ Pour the tempering over the sambar and mix well.
8️⃣ Garnish with coriander leaves and serve hot with idli, dosa, vada, or rice.
