What is Watermelon Rice?
Watermelon Rice is a dish made by incorporating grated or chopped watermelon rind—the white part of the fruit—into cooked rice, often seasoned with traditional Indian spices and herbs. Some variations also use the juice or pulp for added sweetness and a subtle red hue. It’s a delicious way to avoid food waste while experimenting with new flavors.
